These egg white bites are the perfect quick and easy breakfast! Filled with savory breakfast sausage, bright roasted tomatoes, and creamy white cheddar cheese, they make a delicious heat and eat breakfast.

The best thing about egg bites is that you can make a batch of them for the week and heat them in the microwave for a quick, healthy breakfast to go or if you just don’t feel like cooking.

I LOVE to sleep, so egg white bites really allow me to maximize my snooze time during the workweek, because I already have them made and in the refrigerator or freezer. After a quick morning workout to wake up my sleepy body, I can pour my coffee, and quickly heat up a couple egg white bites on my way out the door.

Egg bites with sausage, roasted tomatoes, and white cheddar are definitely a staple to keep up your recipe sleeve!

COST TO MAKE

Not only are these egg white bites with sausage, roasted tomatoes, and white cheddar crazy easy to make, they are also crazy cheap to make! 

I have to admit to you guys, I am continuously working on trying to stick to my grocery budget. Too often do I go wild in the grocery store and my budget goes out the window…..I swear Trader Joe’s is my kryptonite!

Once you break down the cost for the amount of ingredients needed, you can make a batch of 10 egg white bites with sausage, roasted tomatoes, and white cheddar cheese for about $5. For comparison, Starbucks sells two egg white bites for $4.65, with tax bringing the total to $5.16. 

That means making egg white bites at home is about ⅕ of the cost and there is a good chance you already have some of the ingredients in your pantry and fridge! Double win for your bank account!

There is so much flavor packed in these bites that it’s hard to believe how budget friendly they are!

HOW LONG DO THEY LAST?

Another aspect of egg bites that makes them so quick and easy is that they can be refrigerated or frozen.  Egg white bites will keep for 3 to 4 days in the refrigerator and up to 3 months in the freezer.  

HOW TO REHEAT

Reheating the egg white bites is super easy! All you have to do is pop them in the microwave on a microwave safe plate or paper towel and heat. 

REHEATING TIMES

Refrigerated – 20 to 30 seconds (until warmed through)

Frozen – 1 minute (until warmed through)

Due to the ease of heating up egg bites, my boyfriend, Alex, had the genius idea of bringing egg bites for football tailgates and simply reheating them in a foil packet on the grill! Just an idea to try if you like to claim your tailgate spots early like we do!

MODIFY RECIPE TO USE YOLKS

I prefer to make my egg bites using only egg whites (I just really don’t like the texture or taste of egg yolks), but you can most definitely use the yolks too! An easy way to look at using only egg whites in recipes is 1 egg = 2 egg whites.  This recipe calls for 12 egg whites, so you could use 6 eggs if you want to use the yolks.   

STEPS TO MAKE EGG WHITE BITES

  1. Brown the sausage and roast the tomatoes.
  2. Make your egg mixture.
  3. Spray muffin tin with olive oil spray and add cooked sausage, roasted tomatoes, shredded white cheddar, and egg mixture.
  4. Bake at 350° for 15 minutes.
  5. Top with everything but the bagel seasoning and enjoy!

Ingredients
  

  • 3 oz Breakfast Sausage or 2 Breakfast Sausage Patties, Browned
  • 10 Baby Tomatoes Roasted
  • 2 tbsp Avocado Oil or Olive Oil
  • 1/4 cup White Cheddar Cheese Shredded
  • 12 Egg Whites
  • 2 tbsp Half & Half Cream
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • Non-Stick Olive Oil Spray
  • Everything But the Bagel Seasoning to Garnish

Instructions
 

  • Roasting the Tomatoes: Pre-Heat Oven to 425°. While the oven is pre-heating, add tomatoes to a small baking dish or sheet pan (I line mine with foil for easy clean up). Coat tomatoes is 1 tbsp of avocado oil. Add tomatoes to oven and roast about 10 minutes. Once the tomatoes are roasted, remove from oven and decrease the oven temperature to 350°.
  • Cook the Sausage: While the tomatoes are roasting, add 1 Tbsp of olive oil to a medium sized pan over medium/high heat. Once the oil is glistening, add in the ground sausage and cook until browned. Line a plate or bowl with a paper towel and transfer the ground sausage.
  • To a mixing bowl, add 12 egg whites, 2 tbsp half & half cream, 1 tsp salt, and 1 tsp black pepper. Whisk until combined.
  • Spray your muffin tin with non-stick olive oil spray to prevent egg white bites from sticking. Coat evenly.
  • To the muffin tin, add cooked sausage, roasted tomatoes, shredded white cheddar, and egg mixture. Filling the muffin tins about 3/4 to allow the eggs to fluff and expand.
  • Bake in the oven at 350° for 15 minutes.
  • Top egg white bites with everything but the bagel seasoning, to your liking! Remove from muffin tins and enjoy!
