Sweet and tangy cream cheese filling, swirled with raspberry compote between two soft and chewy oatmeal cookies, Oatmeal Cream Pies with Raspberry Compote are a twist on a childhood favorite.

There is just something nostalgic about an oatmeal cream pie.  Little Debbie oatmeal cream pies were my favorite lunchbox treat as a kid, oatmeal cream pies with raspberry compote bring back some of the best childhood memories. 

Oatmeal Cream Pies with Raspberry Compote

CHEWY OATMEAL COOKIES

These oatmeal cookies are soft, chewy, cinnamony goodness! 

To make the chewy oatmeal cookies, mix together ½ cup sugar, ½ cup brown sugar, and 1 stick softened butter. Mix together until the sugar and butter are whipped together.

Baking Tip: I don’t bake often, but when I do I look for tips and tricks to make baking easier, like this baking tip to soften butter! An easy way to soften butter is to fill up a glass cup or jar with water and microwave for 2 minutes.  Dump out the water and place the glass over the stick of butter, so that the glass is upside down on a level surface.  Allow the stick of butter to sit under the glass for 3 minutes or until butter is softened through.

Once the sugar and butter are whipped together, mix in 1 egg, 1 ½ teaspoon vanilla, and 2 teaspoon honey. Then add in 1 cup flour, ½ teaspoon cinnamon, ½ teaspoon baking soda, and a pinch of salt.

When all of the other ingredients are combined mix in 1 ¼ cup quick oats.  The key is to add in the oats at the end, so that they keep their texture.

Once the cookie dough is ready, use a 1 tablespoon measuring spoon to scoop out the cookie dough to make even sized cookies.  Roll the cookie dough into balls and place on a parchment paper lined baking sheet. Bake at 350 on the middle oven rack for 10-12 minutes.   

CREAM CHEESE FILLING

This cream cheese filling has a tangy sweetness that is the perfect compliment to chewy oatmeal cookies!

Mix together 1 block softened cream cheese and 1 cup powdered sugar, using a stand mixer or food processor until the mixture is a fluffy, icing like consistency.

Add the cream cheese filling to a ziplock bag or pastry bag, until ready to use.  When you are ready to use the cream cheese filling, simply cut off a corner of the ziplock bag so that you can easily pipe out the filling. 

RASPBERRY COMPOTE

Raspberry compote sounds like it would be intimidating to make, but it is so simple and easy.  Compote is fruit that is cooked down with sugar and citrus to make a chunky fruit sauce.

In a small saucepan add in 1 cup frozen raspberries, 2 teaspoons sugar, 2 teaspoons lemon zest and 1 tablespoon water. Cook on medium and let come to a boil.  

Add to a bowl and let cool before using.

ASSEMBLING OATMEAL CREAM PIES WITH RASPBERRY COMPOTE

To assemble the oatmeal cream pies with raspberry compote, begin by matching two cookies that look to be about the same size and shape.

Pipe cream cheese filling onto the bottom of one cookie, around the edges of the cookie.  Then add a dollop of cream cheese filling in the center, leaving a groove for the raspberry compote.  

Next, spoon the raspberry compote onto the cookie into the groove you made with the cream cheese filling.  

Add your matching oatmeal cookie to the top and you have a delicious Oatmeal Cream Pie with Raspberry Compote!

Ingredients
  

Chewy Oatmeal Cookies

  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar

  • 1 cup All Purpose Flour
  • 1/2 tsp Cinnamon

  • 1 1/4 cup Quick Oats

Cream Cheese Filling

  • 8 oz Cream Cheese
  • 1 cup Powdered Sugar

Raspberry Compote

  • 1 cup Frozen Raspberries
  • 2 tsp Sugar
  • 2 tsp Lemon Zest
